vegan cinnamon rolls

Yesterday was a revelation in my world of sweets baking. One of my goals for the year was to learn how to make cinnamon rolls – sticky, sweet, and simple. The longterm goal is to whip up a quick batch as a holiday morning treat. But first, one must practice these things! Here is the first batch of the series – and yes, they were de-licious.

I don’t usually have eggs or dry milk around, so I created a vegan version of the sweet bread recipe from The Tassajara Bread Book. All the easier! The recipe came out well, the details are below – but know that this is still a work in progress. I look forward to many more cinnamon roll “testing” in the future…

Vegan Cinnamon Rolls
adapted from The Tassajra Bread Book

For dough…
1 c. warm water
3 1/2 tsp. dry yeast
3 Tbs. sugar
1/4 c. soy milk
1 1/2 c. whole wheat flour
3 Tbs. vegetable oil
1 1/4 tsp. salt
1 c. sifted flour
extra flour for kneading

For filling and topping…
1/4 c. melted “butter” (I love Earth Balance!)
3/4 c. brown sugar
1 Tbs. or more cinnamon
1 c. powdered sugar
4 tsp. or more soymilk
1 tsp. vanilla extract

In a large bowl, add yeast to water and let sit for 5 minutes. Add sugar and soy milk. Then add whole wheat flour, and stir into thick batter. Tassajara says beat for about 100 strokes – or a couple of minutes. Then let rise for 30 minutes.

Fold in oil and salt, and then add sifted flour. Dump the batter onto a floured board. Knead for 5-10 minutes, adding flour as needed, until the dough is smooth. Then let rise for 40 minutes.

Roll out on a floured board in a 1/4-inch thick rectangle. Spread with melted butter, and then sprinkle with brown sugar and cinnamon. Roll up the dough (“fairly tight as you would a carpet”).

(At this point, we put the dough in the fridge overnight. The next morning, I doubled the rising time and they came out great!)

Cut the roll into 1/2-inch thick sections, and place on a greased baking sheet. Bake at 375 for about 20 minutes or until golden and bubbling!

To glaze, mix powdered sugar, soymilk, and vanilla. Frost the cinnamon rolls when they’re hot from the oven.

These cinnamon rolls are best eaten with a hot cup of coffee on a weekend morning. Enjoy!

story of a quilt

There is something special about quilts that live on through generations. (Do you know the children’s book The Quilt Story? It shares that story perfectly.) This one is one of my best-loved gifts from this year’s holidays – a revived Dresden Plate quilt from the 1930s.

Bought at a thrift shop by my mom in the 1990s, the quilt was nearly falling apart by the time I brought it with me to California. But no matter, I loved it! The patterns, the colors, the softly worn fabric….

Luckily, my Nana is a bit of a quilting pro. So last year, she agreed to nurse this quilt back to life as a very special gift. Now many stitches and patches later and with the loving touch of several of her quilter friends, it is as beautiful as new!

I love thinking of the original quilter who, as Nana points out, likely made these Dresden Plates using scraps from her family’s clothing. On the back, Nana tells the story of this particular quilter (such the modern quilter!), so its history will live on with it.

happy monday + recently found

Woooosh… where did this last week go? It flew away in a whirl of projects and evening meetups (every night last week? yup.) and trying to keep up with it all. A good week, but a busy one. I ended up with a lot of chocolate stout cake (eaten almost daily for a week) and new work to begin and creative projects to do. Still things seem to move too quickly sometimes. To slow it down a bit, Mischa and I took off for a one-night retreat to Harbin Hot Springs. Natural hot springs at 110+ degrees? Yes please. And so now I’m relaxed on Monday and ready to begin the week again!

In other news, there’s still plenty of lovely and inspiring things to find around the web. To catchup from last week, here are a few favorites…

+ I’m getting my business finances all lined up this month (taxes, quickbooks and all!). So crafty side projects like this receipts envelope book is what my right brain thinks about as my left brain is crunching numbers…

+ Snow! I know winter in California hardly counts (shout out to New England!) – but there was snow on Mount Tam this week. Snow – I saw it from my window! This post reminds me of that February-but-almost-March feeling of spring on the verge.

+ Another too-sweet-to-forget screenprinted orange burtuqal tote bag. (I think I find a new tote bag every week.)

+ Another Valentine’s Day come and gone, but always a good time for some ee cummings love poems. If love’s not your thing, go read some other ee.

+ I don’t own any perfumes these days, but I’m very intrigued by the sample set by MCMC Fragrances. Her “Maine” scent (sea, air, sun, pine) has an especially sweet story.

+ One of my must-do craft projects for this year is to make recycled cups from glass bottles. I’ve been eyeing sets of lovely wine-bottle green glasses for too long to not try my hands to it…

+ The ladies of 3191 have been some of my longest loved bloggers – so I will will buy a hardcopy of 3191 Quarterly, their seasonal printed mag.

+ Baked goods – always need more of them in these chilly months. Here are some standard+sweet Oatmeal Chocolate Chip Cookies, which remind me of my dad who is the king of cookie baking. He makes a mean oatmeal-chip, yum!

In my mind, Valentine’s Day is all about loving and treating and eating and enjoying good things with good people. And even though it’s a rainy Monday, all of that has been going quite well so far, in a quiet way. Now to top off this drizzly Valentine’s day, there’s a 22oz bottle of Chocolate Stout in the fridge waiting to be turned into a stellar chocolate stout cake tonight.

I first made this cake, which just so happens to be vegan, last year for Mischa’s birthday, as part of a beer-tasting-party celebration. Since then, I’ve remade it more times than I can quickly remember – and it hasn’t failed me yet. The cake is dense and tangy sweet and perfect when it’s topped with a coffee-infused buttercream frosting. Plus, it’s an incredibly simple recipe.

I’m not entirely sure where my version of this recipe came from, but I’m guessing it was a combination of several that I read at the time. It was certainly inspired by some delicious cake photography and recipes at cucinanicolina and smittenkitchen. However, this variation skips the eggs and butter – and cuts right to the stout and chocolate. Enjoy – and hope you have a happy day of loving and treating!

Chocolate Stout Cake

3/4 c. vegetable oil
4 tsp. vinegar
1 tsp. vanilla
3 c. flour
2 c. sugar
2 tsp. baking soda
1/2 c. cocoa powder
1 tsp. salt
12 oz. of your favorite stout beer
1 1/2 c. water

Preheat the oven to 325F.

In a small bowl, combine oil, vinegar and vanilla. In another bowl, mix flour, sugar, baking soda, coca and salt. Make a well in the dry ingredients, and pour wet into dry. Fold until just combined. Pour beer and water over the mixture. Beat well on low until smooth – it will be a thin watery mix.

Fill cake pan almost to the top. (This cake won’t rise very much.) Bake 30-45 minutes – check with a toothpick for doneness.

Frost with plain, coffee or chocolate buttercream – or whip up an extra special cream cheese frosting. Enjoy!

Any special plans for the weekend – maybe some pre-Valentine’s day treats? It looks like I’ll be having a good kind of working weekend with farmer’s market on Saturday and creative projects on Sunday – and some room for reading and hanging out in between. This month is getting busy, but certainly full of good things…

+  The recently launched Makers Project is just as great as I hoped – current favorite is the Lena Corwin set.

+ These colorful recycled cotton socks look nice+cozy for chilly winter mornings – thanks to Gab and d*s for that.

+ Cast iron! There can never be enough – and the cast-iron sandwich press in this photo caught my eye (and it’s second-hand at that!).
